Strawberry Muffins


Ingredients:

1 cup whole wheat flour
1 cup oats
2 tsp baking powder 
1/2 tsp baking soda
1/2 tsp ground cinnamon 
1/2 tsp salt
1 egg beaten 
1/2 cup milk
1 tsp vanilla extract 
1/4 cup canola oil
1/2 c. brown sugar
1/2 pint thinly sliced strawberries





Directions:


Preheat oven to 425 degrees F. Grease 12 muffin tin cups (or use foil muffin holders for easy clean up) In a large bowel mix flour, oats, cinnamon, salt, baking soda and baking powder. In a separate bowel mix egg, milk, oil, vanilla and sugar together, then add strawberries. Combine all ingredients and spoon into muffin cups. Bake 18-20 minutes or until a toothpick inserted in the center of the muffin comes out clean.

These were absolutely delicious! I had never made strawberry muffins before so I was excited to make these, we had a big sale on strawberries at my local grocery store so we got a little crazy buying strawberries :) I'm looking forward to the middle of next month when the farmers markets open up and I can get fresh produce right down the street!
