Breakfast oatmeal muffins

Ingredients:
2 eggs
1 teaspoon vanilla extract
2 cups cinnamon applesauce
1 banana, mashed
1/2 cup honey
5 cups, Old Fashioned rolled oats
1 1/2 Tablespoon milled chai

1/4 cup oat bran 
3 teaspoon baking powder
1 teaspoon salt
2 cups milk (I used 1%)
Optional toppings: dried cranberries, raisins, walnuts, chocolate chips, white chocolate chips




Directions:
Preheat oven to 350 degrees. Mix eggs, vanilla, applesauce, banana and honey together in a bowl. Add in oats, chai, baking powder, salt and mix well with wet ingredients. After mixing ingredients together pour in milk and stir. Spray muffin tin with cooking spray or use cupcake liners (spray either way). Pour mixture evenly into muffin tin cups. I like using 1/4 measuring cup it seems to fill up the muffin tins perfectly. After filling up muffin tins add toppings onto the tops of muffins. Bake 30 minutes until a toothpick in center comes out clean. Cool and enjoy! 


These are great to make ahead and freeze so they last longer (and that you don't eat all of them in one day like my husband and I tend to do. This makes about 21 personal sized oatmeal muffins. I'd love to hear what topping you use when you make these tasty muffins!  

I also prefer tin muffin tim instead of the paper ones because the muffins turn out better :)

A few things you could do is use unsweetened applesauce and put 1 Tsp of cinnamon in the mix. I also read that you can use flaxseed in this as well, I didin't have any on hand and used chai and leftover oat bran from my granola recipe.
