Italian Sausage Soup with Tortellini


Ingredients
  1 pound low fat Italian sausage 
  1 cup chopped onion
  1 teaspoon minced garlic
  6 cups beef broth
  1/2 cup water
  1/2 cup red cooking wine
  2 (14.5 ounce) cans fire roasted tomatoes
  1 cup thinly sliced or diced carrots
  1/2 tablespoon packed fresh basil leaves
  1/2 teaspoon dried oregano
  1 (8 ounce) can tomato sauce
  1 1/2 cups french style green beans 
  8 ounces fresh tortellini pasta 
  3 tablespoons chopped fresh parsley
Instructions
 In a skillet, brown sausage. Remove sausage, drain and let cool before slicing and adding to soup. Saute onions and garlic in the same pan. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, beans and  parsley and sausage in a large pot. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Add tortellini during the last 10 minutes. This recipe makes about 6 servings depending on how large your bowl is :)

I couldn't get enough of this soup! It has a nice spice to it with the fire roasted tomatoes. We used a low fat mild Italian sausage for a little healthier version so if you use a normal sausage you may want to skim off the fat from the top of the soup before you add the pasta.
