Easy baked fish

12:00 PM

(2) 6-ounce tilapia fillets (thawed)
salt, pepper, to taste
1 tsp of dried oregano (1/2 tsp for each fillet)

1 tsp of paprika (1/2 tsp for each fillet) 
4 lemon slices (2 slices per fish)
4 tsp olive oil (2 tsp per fillet)

1 cup of mixed veggies  (1/2 c. per fish you can use frozen veggies if you want)

Place one piece of tilapia fillet in the center of a large square (1 ft by 1.5 ft) out of aluminum foil. Top the fish with 1/2 cup of mixed veggies and sprinkle fish and veggies with salt, pepper, oregano and paprika. Drizzle with olive oil and top with a lemon slices. Roll foil up to secure packet for baking. Place packets on a pan and bake for 20 minutes at 450 degrees until fish is done and flakes easily with a fork.

This is a modified recipe from Sarah-Jane Bedwell recipe that I saw saw on the TODAY show. It was really quick and simple and the only real prep is to thaw the fish out the night before. This could be a fun recipe to experiment using different seasonings and maybe throwing in some fresh herbs! I also want to try this method with salmon and other fish too. This is going to be my go to dinner after I get off of work when I don't feel like spending a long time in the kitchen :)


  1. Sounds great! I did something very similar to this with steelhead trout. I used several slices of lemon...and whatever veggies I had on hand. Very yummy :) I have some tilapia in the freezer - will have to give your recipe a try (after we finish the green chile pork stew I made last night...that will last us through Wednesday - at least ;)
